Garlic Ravioli

In my quest to pull together a quick dinner, I found this recipe on the back of a frozen ravioli bag and it was so good.  Unfortunately, I didn't take a picture but hopefully you can see it in your mind and know that you need to make this recipe ;) 

Garlic Ravioli
1 pkg. cheese ravioli
3 cloves garlic, minced
1 bunch green onions
salt & pepper
1 cup mozzarella cheese

Cook ravioli according to package directions and when draining, reserve 1/4 cup cooking liquid.  While ravioli is cooking, add enough olive oil to cover the bottom of a skillet and add the garlic, salt and pepper.  Cook just until the garlic starts to brown, then add onions and cook just until the start to soften.  Add drained ravioli and reserved liquid to pan with garlic.  Stir and let cook for a few minutes - just to let ravioli get brown, but not stick to pan.  Transfer to serving platter and top with mozzarella cheese. 

This was so simple and all three of my guys loved it!

This weekend is homecoming at the college I work for and I've been asked to be one of the judges for the festivites.  The first event is at 10:00 tonight....don't they know that I'm old and I'm usually in bed by that time?  Oh to be young again and have tons of energy! 

Racing season is coming to an end - just a few more races in October and one in November.  Carl and Ryan are racing this weekend and I'm looking forward to the day when Kyle gets his cast off and can join them.  I forgot to mention that Ryan won his fourth race this season and also won the points championship for the 65cc class.  Way to go Rocky!!
