Mini Pumpkin Bundt Cakes

This cooler weather has made my baking juices start to flow.  All I want to do is bake, cook, look at recipes, and watch cooking shows. Does anyone else get that way once the weather turns cooler?  This is what I've made so far:
chocolate whoopie pies (I followed the quick & easy whoopie recipe)
and the latest is mini pumpkin bundt cakes

If you've checked out these recipes, you'll see that I visit All Recipes frequently, but I also like Tasty Kitchen - after all Pioneer Woman is one of my faves!  Today I'm going to share pictures of the mini pumpkin bundt cakes.  I will say that instead of light brown sugar, I used a combination of dark brown and white sugar with a small amount of molases mixed in.

Mini Pumpkin Bundt Cake

Ingredients for the cake:
4 whole eggs
2 cups brown sugar
1 cup vegetable oil
1 (15 oz) can pumpkin puree
2 cups all-purpose flour
2 tsp baking soda
1/2 teaspoon salt
1 tsp ground cloves
2 tsp cinnamon
1/2 tsp. ginger
1/4 tsp nutmeg

Ingredients for the glaze:
1 cup powdered sugar
2 tablespoons milk
2 tablespoons butter, softened

Instructions:
1. Preheat oven to 350 degrees.  Beat eggs thoroughly with an electric mixer. Add brown sugar and beat until fluffy. Beat in oil and pumpkin, mix completely.
2. Whisk together dry ingredients. Add dry ingredients to pumpkin mixture and combine just until moistened.
3. Pour batter into greased mini bundt pans and bake in a 350-degree oven for 30 minutes or until cakes spring back when touched with your finger.
4. Let cool slightly before removing from the pan. Glaze with a simple powdered sugar icing made by mixing the glaze ingredients together.
Note: this can also be baked in a 10″ tube pan for 1 hour.
